Ingredients:
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cans (28 oz) crushed tomatoes
- 1 cup vegetable broth
- 1 cup heavy cream
- 1/4 cup fresh basil, chopped
- Salt and pepper, to taste
Instructions:
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the chopped onion and minced garlic, and cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
Add the crushed tomatoes and vegetable broth to the pot, and bring the mixture to a boil.
Reduce the heat and let the soup simmer for 10-15 minutes.
Stir in the heavy cream and chopped basil, and let the soup simmer for an additional 5 minutes.
Season the soup with salt and pepper to taste.
Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
